This week’s bake: Carrot Pineapple Muffins
Fresh pineapple, freshly grated carrots, nutmeg and cinnamon. Caribbean forward and one of those bakes where the kitchen smells incredible from the moment everything comes together.

One detail that matters, always drain your fresh pineapple before it does into the batter. Too much moisture changes the crumb structure entirely. Small adjustment, big difference.

This week’s lesson was about room temperature ingredients, and what that actually means in practice. It’s not just about temperature. It’s about understanding what each ingredient brings to your batter before it goes in. The pineapple draining is exactly that kind of thinking.
We also talked about salted vs unsalted butter this week. The short version — your salted butter is fine for most bakes. Know what is adds, adjust if needed, and make an intentional choice. That’s baking with intention.
