This week’s bake: Groundnut Sugar Cakes
My absolute favorite treat from home. Toasted peanuts, ginger spiced sugar syrup, and that crisp shell that sets around every single peanut. Rugged, golden, ginger in every bite.

There’s something about making your favorite thing from home in your own kitchen that hits differently. You’re not just following a recipe. You’re following a memory.
Stay Inspired
The lesson this week was about mixing order. And in this recipe the timing of the syrup is everything. You take it to thread stage; watching the texture shift; and then the peanuts go in fast. You have to move quickly. The sugar doesn’t wait.
Get the order wrong and the whole texture changes. That’s not just technique. That’s respect for the recipe.

The Backstory:
In this week’s blog post I wrote a letter.
To myself. And honestly, to you too.
A year of baking out loud. What it actually looked like. Writing consistently when it would have been easier not to. Showing up when I was unsure. Failing publicly with brownies and coming back for a take three. Getting paid for my black cake and not fully letting myself feel it.
And what I’m carrying into year two — confidence, joy, intention. The kind that only comes from a year of showing up.
Year one taught me to show up. Year two is where I get to enjoy it.
In case you missed it…
